The Spot Prawn is ranked in the top 10 of the ~ 100 species of Prawns in the world for taste and size. They are plump and sweet like a small lobster. Wild Pacific Spot prawns are most recognizable for their reddish brown colour, which turns bright pink when cooked, defining white spots on their tail and white horizontal bars on the carapace. They are the largest of seven commercial species of shrimp found on the west coast of Canada and Pacific Northwest. Harvested with baited pots or traps and left for a period of time on the sea floor, the prawns are brought aboard the vessel live then most often headed and Frozen at Sea (FAS) immediately. The result is a truly gourmet buttery prawn in demand by the best chefs and known connoisseurs.
Wild Pacific Spot Prawns are recognized as a healthy, natural seafood choice versus growing concerns over widely available cultured prawns (Tiger and White prawn species). The Pacific Northwest Spot Prawn Fishery is considered one of the most sustainable Prawn fisheries in the world.
